Gyoza Recipe (Makes about 25 dumplings)

Ingredients:

  • Filling:
    • 150g ground pork
    • 180g cabbage (or Chinese cabbage), finely chopped
    • 30g chives (about 1/3 bunch), finely chopped
    • 1 clove garlic, minced
    • 1 piece ginger, minced
    • Salt and pepper to taste
    • 1 tsp sesame oil
    • 1 tsp sake
    • 1 tsp potato starch (optional for thickening)
  • Dumpling Wrappers:
    • 1 pack (about 25 pieces)

Instructions:

  1. Prepare the Filling:
    • Mix ground pork, cabbage, and chives in a large bowl.
    • Add minced garlic, ginger, salt, pepper, sesame oil, and sake. Combine well.
    • Add potato starch if desired to help bind the mixture.
  2. Fill the Dumplings:
    • Place a small amount of filling (about 1 tsp) in the center of each wrapper.
    • Wet the edge of the wrapper with water, fold it in half, and press edges to seal, creating pleats if desired.
  3. Cook the Dumplings:
    • Heat a pan over medium heat and add oil. Place dumplings in the pan and fry until bottoms are golden brown.
    • Add a small amount of water to the pan, cover, and steam until wrappers are fully cooked.
  4. Serve:
    • Serve hot with a dipping sauce of your choice.
